Sausage And Veggie Frittata

Prep Time: 10 minutes | Cook Time: 30 minutes | Serves 4-6

Frittata, Quiche, Breakfast Casserole… Are they all the same or are they all different? It doesn’t matter, because whatever you call this recipe it’s out of this world. When you’re tired of the same old thing that you’ve been having for breakfast every day, try this. You will thank yourself and whoever is at your table eating with you, will thank you too.


1 lb turkey sausage
10 large eggs
1 tablespoon olive oil
1 red bell pepper
1/2 cup chopped red onion
1/2 cup chopped spinach
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon cilantro
1 tablespoon chopped green onion


  1. Preheat oven to 350°. Spray a 13″ x 9″ baking dish with non-stick cooking spray.
  2. Brown turkey sausage in frying pan. Set aside.
  3. In a frying pan, heat olive oil over medium high heat. Add bell pepper and onion. Saute 2 to 3 minutes. Stir in meat and spinach. Cook an additional 2 minutes.
  4. In a mixing bowl, whisk 10 eggs. Add meat mixture, cilantro, salt and pepper. Pour into 13″ x 9″ baking dish.
  5. Cook for 30-35 minutes.
  6. Top with green onion.
  7. Enjoy!

To make this dish even more yummoh, top with 1/2 cup cheddar cheese.
